Clay Corner Inn Herb Baked Eggs
Need: Cooking Spray, Parmesan cheese, eggs, heavy cream, grated cheese (Swiss, Monterey Jack or sharp cheddar), Fines Herbs
Instructions: Preheat oven to 425F Spray small ramekin Sprinkle with Parmesan cheese Drop in one egg Add 1 Tbsp. heavy cream Top with grated cheese Put herbs on top
Bake on baking sheet for 12 minutes, until set and bubbly, and slightly browned. Serve ramekin on plate with home fries or biscuit &/or breakfast meat.
Nutmeg Muffins
Innkeepers test and consume lots of muffins, and these nutmeg muffins are superb. Crunchy tops, tasty insides and the kind of recipe you always have the ingredients on hand (and you don't have to chop anything!). Simple, quick, yum, yum.
Mix the following and save cup for topping:
2 c. flour 1 c. brown sugar 1/3 c. butter Set aside the cup and add: 1 c. flour 2 tsp. baking powder 2 tsp. nutmeg tsp. baking soda tsp. salt 1 c. buttermilk (okay to use Saco dry mix) 2 eggs
Blend by hand and fill greased muffin tins full; sprinkle with topping; bake 20 minutes at 350 F. Okay to freeze. Enjoy!!
Veggie Tort (for 4 people)
Cooking Spray 1medium bag Mozzarella cheese 8 eggs1 small carton heavy cream 1 large bag of spinach6 medium tomatoes1 box sliced mushrooms Fresh Mixed herbs and a touch of salt & pepper
Instructions:
Preheat oven to 400F Spray glass baking dishLayer dish as follows: 1st spinach leaves 2nd mushrooms 3rd sliced tomatoes 4th mozzarella cheese
Repeat this until dish is fullMix together in a separate bowl the heavy cream, eggs, mixed herbs and salt & pepperPoor over the layered vegetables
Sprinkle mozzarella cheese on top and bake in the oven for 45 mins or until cooked.
